Rimantas Jankauskas studied medicine and acquired his PhD in 1988. Jankauskas was appointed as an associate professor in 1994 and acquired full professorship in 2007.

His academic work has been interdisciplinary and international in its nature. His field of research is human biology, paleopathology, forensic anthropology, and bioarchaeology with the focus on disease and pathology in the Lithuanian populations. This is well illustrated by the fact that Jankauskas was the co-investigator on the project 'European Health History from Late Palaeolithic till Modern Times' (2001–2018). More recently, he has been engaged in the study of past populations through the application of various biomolecular methods such as light stable isotopes and aDNA. During his career, he has also advantaged the study of forensic anthropology in Lithuania, especially investigation of mass graves, for instance by participating as co-investigator in the project 'New Methodologies and Protocols of Forensic Identification by Craniofacial Superimposition (MEPROCS)' (2012–2016, European FP7 project), and by improving the methods used in the bioarchaeological studies of human remains.
